VINIFICATION :
- manual leaf removal to improve grape ripeness and health
harvest at peak maturity with 100% destemming
- cold skin contact maximize primary fruit: 12 hours for the Viognier & 48 hours for the Colombard
- partial racking of the must - fermentation in vats
- bottling in October

TASTING NOTES :
Appearance: pale yellow with green highlights
Nose: very exotic, predominantly aromas of passion fruit, citrus and apricot
Taste: lush & rich with a fusion of fresh fruit & subtle spicy notes. The light finish is very refreshing

AGING POTENTIAL : Enjoy now
