VINIFICATION:
- Manual leaf removal to improve grape ripeness and health.
- Manual harvest at peak maturity with refrigeration of grapes.
- Skin contact for 12 hours at cold temperature.
- Gentle extraction through pneumatic pressing.
- Sedimentation to 12°C for a rapid “débourbage”.
- Fermentation in stainless steel vats at 14°C.
- Aging on lees with “batonnage” for 5 months.
- A single bottling run in February.

TASTING NOTES:
- Appearance : Pale yellow with greenish hues.
- Nose : Lively and intense, with notes of grapefruit, boxwood, violet and a mineral trace.
- Taste : Full bodied with soft, fleshly, pure unoaked flavours and a long, fresh mineral finish.

AGING POTENTIAL: Enjoy now or cellar for up to 3 years.
FOOD & WINE PAIRING: Serve at 48°F (8°C). Great with appetizers.
