VINEYARD AND WINERY WORK:
- organic farming
- plowing under the foot of the vines and seeding rows with grasses that favor
biodiversity
- manual harvest with sorting (avg yield is 30 hl/ha)
- 1/2 whole cluster and 1/2 whole berries without adding SO2
- cold pre-fermentation maceration for 5 days
- natural fermentation at 24°C and a warm maceration (28°C) for 20 days to round
off tannins
- aging in French oak of 1/3 of the volume and in cement tank of 2/3 for 12 months
- blending and bottling without filtration in the Spring (deposits probable)

TASTING NOTES
:
- Appearance : Dense opaque purple color.
- Nose : Very powerful, combining aromas of blackberries, licorice, spice box and pepper.
- Taste : Lots of volume, power and richness, dense tannins and a lush and powerful structure.

AGING POTENTIAL: Enjoy now or cellar up to 10 to 12 years
FOOD & WINE PAIRING: Decant one hour before serving at 65° (18°C).
