VINEYARDS AND WINERY WORK :
- organic farming
- plowing under the foot of the vines and seeding rows with grasses that favor
biodiversity
- manual harvest with sorting at the beginning of maturity (avg yield is 50 hl/ha)
- refrigeration of grapes to 2°C for 48 hours before reaching the winery
- direct press
- juice stays with its must before fermetation for 5 days
- « débourbage » and fermentation at 16°C et 18°C for 21 days
- aging on lees for 3 months, blending and bottling in February

TASTING NOTES:
- Appearance : Intense, brilliant rose petal
- Nose : Lively, fresh fruit aromas, floral notes and soft spices.
- Taste : Velvety and rich, it develops vivid fruit flavors and a remarkably refreshing finish.


AGING PONTETIAL: Enjoy now. It will also develop some complexity with a bit of time.
FOOD & WINE PAIRING: Serve at 55°F.
